ANN ARBOR, MI — Crowds of customers lined up at various Washtenaw County bakeries Tuesday morning to get their paczek fix.
The traditional Polish pastry, packed with calories and stuffed with various fillings, is eaten before the first day of Lent. Bakeries across the county prepared for an influx of customers on Fat Tuesday, including Dimo’s Deli and Donuts at 2030 W Stadium Blvd. in Ann Ann Arbor, which has been around for 47 years and sold only paczki on Monday and Tuesday, owner Walid Dimo said.

“The first year, we made 10 dozen,” Dimo said, as he was lifting trays of dough.
This year, Dimo’s prepared 250 dozen pre-ordered paczki, he added. The bakery used gallons of strawberry, blueberry, raspberry, custard, apple and buttercream filling to stuff the 3,000 fried mounds of dough.
Dimo raced back and forth from the front to the back of the kitchen Tuesday morning, with a few other employees and family members managing racks of paczki.
“Just when we think it’s letting down, the line gets bigger. I unhooked the phone two or three times,” Dimo said, poking fun at his brother in law for stopping by to eat and leaving without lending a hand. “Thank God my sister is wonderful.
“… We don’t measure nothing. We don’t weigh anything. It’s all by feel.”
Rita Stark, Ruth Wollin and Carol Spencer stopped into Dimo’s, their neighborhood bakery, for a piece of the action.
“This is a big day,” Stark said. “I like the darkness of the crust. It’s just my personal favorite. I think it’s got a good texture. I called up Carol because (she) is a connoisseur. Then I found out Ruth had just come back … she’s been skiing for two months.”
The three said the bakery is among their favorite spots for coffee and to enjoy not just the product, but the atmosphere.
“It’s not a grocery store, you get to sit down here and drink coffee and socialize,” Wollin said. “The day I moved in, we came here to get sandwiches to feed the people who were helping me move.”
“It is a neighborhood place. An established, local place,” Spencer added.
Ypsilanti-based Dom Bakeries at 1305 Washtenaw Road in Ypsilanti, another popular spot for sweets and paczki, is a regular Fat Tuesday hot spot. Employees were scrambling to fill orders Tuesday.
“They mostly have long lines,” said Steve Hasten, a nearby resident who dropped in just before 9 a.m. “It’s been pretty steady since I’ve been in here. This would probably be the only place I would ever go.
“I just really love paczki and they have all the different flavors. And it’s nice to kind of watch the people get boxes out … the staff is friendly and they always have a good supply of donuts and everything … they don’t seem to run out.”
Angela Kendrick frequently visits Dom’s and brought her friends Peggy Ramsey and Reeta Young, who had not tried a paczek before Tuesday.
“I just called her and told her she was going to get a paczki,” Kendrick said. “It’s the best in town. I like that they make them here. They’re not shipped in and they’re fresh.”
Young’s first pastry was raspberry-flavored. “Delicious,” she said.
“They’re very flavorful, soft and fresh,” Ramsey said.
