Valhalla Bakery is soft opening in its new St. Petersburg space this weekend – Tampa Bay Times

ST. PETERSBURG — For months now, Celine Duvoisin has been updating loyal followers of Valhalla Bakery on its Instagram account. The owner of the all-vegan bakery announced in fall 2019 that she was moving from multi-vendor food hall Baum Ave Market to her own space in the Grand Central District.

Fans of the bakery’s buttercream frosting-topped cupcakes, turnovers, cookies and more waited, the proposed opening date pushed from month to month by the unexpected delays that come with opening a new restaurant. Along the way, Duvoisin announced bakery pop-ups, posted about pressure-washing the sidewalks, showed off a green couch she bought for the new space.

Then, this week: “Change your weekend plans,” she wrote in a post. “We finally passed all our inspections and the bakery will be opening the doors.”

At 10 a.m. on Sunday, March 8, Duvoisin will welcome guests in the new Valhalla Bakery for the first time. It’s a soft opening, she emphasized, but she didn’t want to wait any longer. At every one of those pop-ups, they have sold out.

On Friday we got a look at the new space, which contains a couple dozen seats (good luck getting a spot at that picture-perfect couch near the window), a kitchen, gleaming bakery cases, and an outdoor courtyard in the back. It’s currently home to a bunch of plants Duvoisin is still distributing, but she hopes to turn it into an Astroturfed space where they can host things like yoga classes.

Valhalla will share the space with Lucy’s, the more savory side of the building that will serve a variety of vegan sandwiches and sides. (It’s not quite ready to serve food, but guests who head to Valhalla in the meantime will be able to meander around the entire space.)

From now until Sunday morning, Duvoisin and her team are going to “make basically everything we can.”

The plan for the new spot, which feels gigantic compared to their Baum Ave Market space, is to serve all the Valhalla favorites, just way more of them and in a larger variety. Instead of two types of cookies, maybe four or five. More turnover flavors. And definitely cake by the slice and whole cakes.

“But make sure to note that we will not have the biscuit sammies this weekend,” Duvoisin said, referencing her popular vegan biscuit sandwiches.

Eventually, they plan to serve Bandit coffee, which is right down the street; a lineup of mocktails using things like non-alcoholic gin; and, when they get their license, beer and wine. Right now, there are “bougie sodas” to quench your thirst.

Valhalla Bakery’s soft opening is 10 a.m. to 6 p.m. Sunday, March 8, at 2462 Central Ave. in St. Petersburg.
