Mum shares ‘easiest’ chocolate cake recipe which DOESN’T require flour – The Sun

Restaurant News

AS a result of the lockdown, we now have all the time in the world to bake. There’s just one small problem… getting your hands on a bag of flour is the equivalent of winning the supermarket lottery.

That said, one savvy mum has revealed how you can cook up a chocolate cake with the most basic of ingredients – and it looks absolutely delicious.

Australian television presenter Rebecca Judd shared the simple, five-ingredient recipe with her 869,000 Instagram followers.

The mum-of-four captioned the video: “It’s literally the easiest cake in the world to make (chuck everything in the bowl and mix. That’s it) and is something we’ve been enjoying doing together as a family as we adjust to our new routine.”

Instead of using bars of the sweet stuff, Rebecca uses hot chocolate powder in the simple recipe along with almond milk, butter, sugar and eggs.

And the method couldn’t be any more straightforward as all you need to do is combine the ingredients in one bowl, mix until smooth and bake for 40 minutes.

How to make Rebecca’s flourless chocolate cake:

  • 200g butter (room temperature)
  • 200g drinking chocolate
  • 200g almond meal
  • 200g caster sugar
  • five eggs
  • icing sugar to dust over the top

  • Pre-heat the oven to 160
  • Combine all the ingredients in one bowl and mix until smooth
  • Pour into a cake tin and bake for 40 mins
  • Dust icing sugar over the top

As there’s no rising agent, the cake is a little flatter than other bakes – but this means you can also turn them into brownies by splitting them up into smaller squares.

Better still, the simple recipe is also kid-friendly too as Rebecca got her three eldest kids cracking eggs to go in with the cake batter.

Her post has racked up over 8,000 “likes” from fans who pledged to try the recipe out for themselves.

One replied: “I am going to make this tomorrow for my kids. Thank you!”

Another gushed: “Looks delicious, can’t wait to try it.”
