A beloved Houston bakery reopened its doors this week ready to serve its delicious sweet bread after taking time to regroup to put safety measures in place amid the COVID-19 pandemic.

El Bolillo Bakery, with three locations around town, reopened on April 13 after implementing a few updates.
They even created a video in Spanish announcing the grand reopening of all the bakeries from 7 a.m. to 9 p.m. Monday-Sunday as the employees announced they are ready to serve you.
“We opened back up Monday, the day after Easter, I wanted to give my team the opportunity to be with their families during this pandemic. I gave them a 2 week paid vacation time and asked them to be safe so we can return to work soon.,” said Kirk Michaelis, owner of El Bolillo Bakery.
Michaelis said they took the time to clean up the bakery and made a few added improvements for the safety of its customers that include:
- A security officer controlling the entry allowing only 10 people in at a time
- Team members handling and placing desired items on customers trays (those employees will not touch customers trays)
- Employees wearing all applicable Personal Protective Equipment
- Asking one person per family to be allowed in
- Laying down yellow markers for customers to follow encouraging social distancing
The bakery has also seen its share of revenue loss amid the COVID-19 impact.
“It’s about one third of what it normally is and the cake dept. is really slow with birthday parties and weddings being cancelled,” said Michaelis. “I was saving to open up another location but used that money instead for my employees.”
In the coming days Michaelis plans to close the bakeries from 7-8 a.m. Monday, Wednesday and Friday’s to give away free bolillos using the parking lot as a drive thru.
“Team Bolillo is happy to be back working and serving the community. We are blessed to be open and I am grateful to have such an amazing team,” said Michaelis.
