Shameless Burger and Tacos Veganos are two Phoenix food stands that want to banish the idea that tasty fast food and veganism aren’t compatible. These new pop-ups are planting their flags in Phoenix’s growing vegan food scene with tacos and burgers — sans meat.
The fledgling pop-ups are starting with a small menu. While the COVID-19 crisis presented a unplanned hurdle in both business’ plans, the owners said they wanted to take a chance and move ahead.
Here are two new vegan food pop-ups to try in Phoenix.
What is Tacos Veganos?
José Bojórquez started Tacos Veganos because he wanted to help others like him — someone who became vegan and craved street food he grew up on in Maryvale, a west Phoenix neighborhood. He also wanted to share an affordable way for people to introduced plant-based food to their diets.
Tacos Veganos will set up for the first time on Sunday, May 17 at an auto shop in midtown Phoenix, where Bojórquez and his team will be slinging three kinds of tacos: al pastor, carne asada and birria. The food stand will also offer pozole rojo, horchata and aguas frescas.
Bojórquez said his goal is to start small and work his way up to a food truck. He uses textured soy protein for the tacos al pastor and carne asada, and jackfruit for the birria.
“Birria was my thing,” Bojórquez said. “I love birria. When I transitioned to being vegan, when I was trying to start that plant-based diet, all the good food I loved — I didn’t even know the idea that you could make it. I thought I would never eat birria again.”

Shameless Burger: ‘Like vegan In-N-Out’
The concept of Shameless Burger sprung from a conversation among Ysabella “Izzy” Salazar, her boyfriend Connor Dubin and his childhood best friend Colton Mastro, who’s the son of steakhouse restaurateur Jeff Mastro.
Salazar, who’s vegan, thought there weren’t many options for meat-free burgers in Phoenix. They came up with a pop-up business Salazar described as “like vegan In-N-Out,” with the ultimate goal of one day opening a brick-and-mortar restaurant.
“I think when people imagine vegan, they don’t imagine something so yummy and filling,” Salazar said. “I wanted to do something that would convert carnivores and show that vegan can be something awesome.”
Shamless Burger held its most recent pop-up May 8-9, but the location will change each time, Salazar said. They plan on having weekly pop-ups, she said.
People can pre-order online and options include a burger, double burger and customizable fries with four types of dipping sauces. The burgers come with Impossible patties, lettuce, tomatoes, pickles, caramelized onions and vegan cheese.
