This week we salute Martha’s Country Bakery, whose five locations miraculously remained open since the pandemic and lockdowns began. Nothing is more comforting to the soul than home- baked cakes, cookies, cupcakes, pies, pastries, and freshly brewed coffee. It is for these reasons and others that partners George Stertsios and Tony Zannikos took the decision to stay open and serve the communities of Queens and Brooklyn. Never missing a day, the dedicated staff at Martha’s Country Bakery initially prepped orders for take- out and pick- up only and Jenny and Barbara, managers at the Ditmars Blvd. location, relayed how grateful Astorians were that their ‘slice of heaven’ was open, providing comfort and a sense of normalcy in their lives. Staff shifts were rotated so that all employees could retain their jobs and their dignity and that meant a lot to the dozens of staff across all five locations in Astoria, Bayside, Forest Hills, and Williamsburg. In addition, generous donations of 20,000 slices of cake, puddings, and muffins were distributed to hospitals to keep the heroes consoled and delighted.

Indoor dining is now on at 25% or sip outside while the weather permits. The secret to George and Tony’s success is in the quality of the ingredients. Real butter, vanilla, chocolate, nuts, and fresh fruit are used in their decadent creations and you can taste it in every delicious bite of their cakes, over a dozen varieties of cupcakes, pies, macarons and puddings. What’s more, these treats are not too sweet, so the natural flavors really come through and taste like home.

Sparkling cases show off Martha’s Country Bakery cakes which are almost too pretty to eat. The many layers of moist cake are full of flavor and quality ingredients such as raspberry layer cake featuring chocolate cake layers slathered with raspberry mousse, topped with whipped cream while lemon coconut cakes look lighter than air. Do I need to tell you how extraordinary the chocolate fudge cake is or how luscious the caramel cake is? Take home a moist carrot cake, red velvet cake or strawberry banana cake, with real cream. Tiramisu cake is light and fluffy, as is the tres leches, and the Black Forest is a classic. Life’s happy occasions still go on so pick up one of these festive cakes or a Very Berry Napoleon cake to enjoy at your next birthday, anniversary, or Zoom party. You can also order customized cakes or a platter of cake pops or cupcakes for children’s birthdays or any occasion.

Cheesecakes and cheesecake bars are forks down the BEST in town. These smooth and creamy cheesecakes have the perfect texture, creaminess, and flavor. There’s classic New York style, marble cheesecake,

Oreo, peanut butter, white chocolate raspberry, and Nutella cheesecake to name a few. Cheesecake bars are baked in a rectangular pan and come in salted caramel walnut, nutty apple, or citrusy Key Lime cheesecake bars.

Forget pie in the sky… Martha’s Country Bakery has flaky fruit pies and fluffy cream pies that are top notch. What’s better than a slice of warm apple pie with a scoop of vanilla ice cream or Italian gelato? The friendly staff will even warm up your pie, making it extra special. Apple crumb, sour cream apple, tart cherry, key lime, and triple berry are full of fresh fruit while classic banana cream pie and chocolate cream pies are nostalgic favorites. Go Greek with baklava, galaktoboureko, and ekmek delicate pastries along with a cup of espresso. If you crave something savory, try the flaky Greek spinach pie or cheese pie made with flaky phyllo pastry.

To accompany all these delicious bakery items, the coffee bar at Martha’s whirrs and hisses with robust brews, lattes, espresso, chai, hot chocolate, and the combination of aromas emanating from the kitchen and the coffee machines is simply intoxicating. Pick up your favorite coffee or tea before work along with a homemade muffin, danish, cinnamon stick, or slice of buttery yogurt pound cake or lemon poppy seed pound cake.
